Zucchini White Bean Power Dip
This creamy, nutrient-dense dip combines zucchini with heart healthy white beans and hemp hearts. A touch of lemon and cumin enhances the flavor, while a hint of cayenne adds warmth. Light yet satisfying, it’s perfect as a dip, spread, or even a salad dressing base.

Ingredients
- 2 tablespoons lemon juice
- 1 teaspoon pressed garlic
- 1 cup organic cooked cannellini beans
- ½ teaspoon ground cumin
- 1 teaspoon sea salt
- 2 cups chopped zucchini (about 1 medium zucchini)
- ¼ cup hemp hearts
- 2 tablespoons nutritional yeast
- ⅛ teaspoon ground cayenne (more to taste, or omit if avoiding spice)
Preparation
- Blend the dip: Add ingredients in the order listed and blend well in a food processor until smooth.
- Serve & enjoy: Use as a dip for fresh vegetables, a spread for sandwiches and wraps, or as a thickener for salad dressings.
- Adjust consistency: For a thicker texture, blend with 1–2 tablespoons of olive oil and adjust seasoning as needed.
