Ingredients

  • 2 tablespoons lemon juice
  • 1 teaspoon pressed garlic
  • 1 cup organic cooked cannellini beans
  • ½ teaspoon ground cumin
  • 1 teaspoon sea salt
  • 2 cups chopped zucchini (about 1 medium zucchini)
  • ¼ cup hemp hearts
  • 2 tablespoons nutritional yeast
  • ⅛ teaspoon ground cayenne (more to taste, or omit if avoiding spice)

Preparation

  1. Blend the dip: Add ingredients in the order listed and blend well in a food processor until smooth.
  2. Serve & enjoy: Use as a dip for fresh vegetables, a spread for sandwiches and wraps, or as a thickener for salad dressings.
  3. Adjust consistency: For a thicker texture, blend with 1–2 tablespoons of olive oil and adjust seasoning as needed.
