Sweet Potato Almond Fritters
These soft, golden fritters are packed with sweet potato goodness, protein-rich almonds, and fragrant cilantro, making them a nutrient-dense snack. Baked instead of fried, they develop a light, crispy texture while staying tender on the inside. Serve them on their own or with hummus or tahini for a delicious, wholesome bite!

Ingredients
- 3 cups peeled and grated sweet potato (about 3 medium sweet potatoes)
- 1 cup finely chopped white onion
- 1 ½ teaspoons pressed garlic
- 1 ½ teaspoons sea salt
- 1 cup almond meal or almond flour
- ½ cup finely chopped fresh cilantro leaves
- 1 teaspoon ground black pepper
- 2 eggs
- 1 tablespoon olive oil (for greasing the baking sheet)
- ½ cup sliced almonds
- Optional for dipping: hummus or tahini sauce
Directions
- Preheat the Oven: Position a rack in the middle of the oven and preheat to 375°F (190°C).
- Mix the Ingredients: In a large mixing bowl, combine grated sweet potato, onion, garlic, sea salt, almond meal, cilantro, and black pepper. Stir in the eggs and mix well.
- Form the Fritters: Using clean hands, scoop heaping tablespoons of the mixture and shape into compact, puck-like fritters. Place them evenly on a baking sheet greased with olive oil.
- Add a Crunchy Topping: Sprinkle the tops of each fritter with sliced almonds for added texture.
- Bake to Perfection: Bake for 30 minutes, then carefully flip each fritter and bake for an additional 5 minutes until golden and crisp.
- Cool & Serve: Let cool for 5 minutes before serving.
