  • 3 cups peeled and grated sweet potato (about 3 medium sweet potatoes)
  • 1 cup finely chopped white onion
  • 1 ยฝ teaspoons pressed garlic
  • 1 ยฝ teaspoons sea salt
  • 1 cup almond meal or almond flour
  • ยฝ cup finely chopped fresh cilantro leaves
  • 1 teaspoon ground black pepper
  • 2 eggs
  • 1 tablespoon olive oil (for greasing the baking sheet)
  • ยฝ cup sliced almonds
  • Optional for dipping: hummus or tahini sauce

Directions

  1. Preheat the Oven: Position a rack in the middle of the oven and preheat to 375ยฐF (190ยฐC).
  2. Mix the Ingredients: In a large mixing bowl, combine grated sweet potato, onion, garlic, sea salt, almond meal, cilantro, and black pepper. Stir in the eggs and mix well.
  3. Form the Fritters: Using clean hands, scoop heaping tablespoons of the mixture and shape into compact, puck-like fritters. Place them evenly on a baking sheet greased with olive oil.
  4. Add a Crunchy Topping: Sprinkle the tops of each fritter with sliced almonds for added texture.
  5. Bake to Perfection: Bake for 30 minutes, then carefully flip each fritter and bake for an additional 5 minutes until golden and crisp.
  6. Cool & Serve: Let cool for 5 minutes before serving.
