Salt and Pepper Broccoli
This is a simple yet flavorful roasted broccoli with umami-rich ume plum vinegar and black pepper. Quick and easy, this dish makes a perfect side or a light, savory snack.

Ingredients
- 5 cups broccoli florets
- 2 tablespoon olive oil
- 4 teaspoons ume plum vinegar
- 1 ½ teaspoons fresh ground black pepper
- 2 teaspoon toasted sesame oil
Directions
- Preheat the oven to 375°F (190°C).
- Toss the broccoli florets with olive oil, ume plum vinegar, black pepper, and toasted sesame oil in a large mixing bowl until well coated.
- Spread the broccoli evenly on a parchment-lined baking tray.
- Bake for 8–10 minutes, tossing halfway through.
- Check for doneness: The broccoli should be crispy on the edges and fork-tender in the stem. Serve immediately!
Chef’s Tip
For extra crunch, sprinkle toasted sesame seeds or crushed almonds before serving. If you love a hint of heat, add a pinch of red pepper flakes!
