Raspberry Chia Parfait
This nutrient-packed parfait blends fiber-rich chia seeds, vitamin C-loaded raspberries, and antioxidant-packed spinach into a deliciously vibrant, naturally sweet treat. The creamy chia mixture thickens overnight, creating the perfect base for fresh berries, crunchy nuts, and a boost of plant-based protein. Whether enjoyed as a quick breakfast, post-workout snack, or wholesome dessert, this parfait is both nourishing and indulgent.

Ingredients
- 1 ripe banana
- 1 large handful of spinach (approx. 1 heaping cup, chopped)
- 1 packed cup of raspberries
- 1 medium navel orange, peeled
- ¼ cup chia seeds (adjust as needed for thickness)
- ¼ cup water
- Option toppings like fresh berries, crushed walnuts and/or almonds and hemp hearts
Directions
- Blend the base: In a blender, combine banana, spinach, raspberries, orange, and water until completely liquefied. There should be no visible green pieces remaining.
- Mix in the chia: Pour the mixture into a mason jar, bowl, or airtight container, and stir in chia seeds, ensuring even distribution.
- Refrigerate & thicken: Cover and chill overnight (or at least 4 hours) until the mixture thickens into a pudding-like consistency.
- Serve & top: When ready to eat, scoop into a bowl and top with fresh berries, crushed nuts, or hemp hearts. If the mixture is too thick, stir in a splash of water or plant milk before serving.
Chef’s Tip
For an extra creamy texture, blend the parfait again after it sets! If you love a bit of crunch, sprinkle toasted coconut or cacao nibs on top for contrast.
