Ingredients
- 2 cups finely diced Bartlett pear (approx. 1 ½ pears)
- 2 cups diced, deseeded tomato
- 2 tablespoons lime juice (juice of 2 large limes)
- ½ teaspoon sea salt
- 2 tablespoons finely chopped, deseeded jalapeño
- ½ cup finely diced red onion
- 1 cup chopped cucumber (approx. ½ English cucumber)
- ½ cup chopped cilantro
- 3 medium cloves garlic, pressed
- 3 tablespoons olive oil
- Fresh ground black pepper, to taste
Directions
- Dice all ingredients as finely as possible, ensuring the pear and cucumber are cut to a similar size and the onion and jalapeño are diced smaller.
- In a large mixing bowl, combine the garlic, lime juice, and salt.
- Add the remaining ingredients and stir well.
- Taste and adjust seasoning with more salt, pepper, or lime juice if needed.
- Serve immediately or refrigerate for 15-20 minutes to let the flavors meld.

For a more complex flavor, let the salsa sit for at least 30 minutes before serving.
