  • 2 cups finely diced Bartlett pear (approx. 1 ยฝ pears)
  • 2 cups diced, deseeded tomato
  • 2 tablespoons lime juice (juice of 2 large limes)
  • ยฝ teaspoon sea salt
  • 2 tablespoons finely chopped, deseeded jalapeรฑo
  • ยฝ cup finely diced red onion
  • 1 cup chopped cucumber (approx. ยฝ English cucumber)
  • ยฝ cup chopped cilantro
  • 3 medium cloves garlic, pressed
  • 3 tablespoons olive oil
  • Fresh ground black pepper, to taste

Directions

  1. Dice all ingredients as finely as possible, ensuring the pear and cucumber are cut to a similar size and the onion and jalapeรฑo are diced smaller.
  2. In a large mixing bowl, combine the garlic, lime juice, and salt.
  3. Add the remaining ingredients and stir well.
  4. Taste and adjust seasoning with more salt, pepper, or lime juice if needed.
  5. Serve immediately or refrigerate for 15-20 minutes to let the flavors meld.
