Ingredients
- ¾ cup walnuts
- ⅔ cup chopped dates
- ¼ teaspoon cinnamon
- ⅛ cup coconut flakes
- ½ teaspoon vanilla bean powder
- ¼ cup cocoa powder
- Pinch of sea salt
- Pinch of cayenne (optional, for a hint of spice)
Directions
- In a food processor, grind the walnuts until they reach a fine, powder-like consistency.
- Add the dates and process for 1-2 minutes until fully incorporated.
- Add the remaining ingredients and blend until the mixture is well combined and sticky.
- Roll the mixture into small 1-inch balls or press into a parchment-lined dish to cut into squares.
- Optional: Top with coconut flakes, chopped nuts, or a drizzle of honey for added texture and flavor.
- Place in the freezer for about 10 minutes, or until firm.
- Enjoy immediately or store in an airtight container in the freezer for long-lasting freshness.
Chef’s Tip
For a smoother consistency, soak the dates in warm water for 10 minutes before blending. Want an even richer chocolate flavor? Add a teaspoon of melted dark chocolate to the mixture before shaping!
