Macadamia Strawberry Mango Cheesecake

Crust & Topping
- 1 ¼ cups coconut flakes (unsweetened, sulfate-free)
- 1 cup macadamia nuts
- Pinch of sea salt
- ½ cup + 2 tablespoons dates, pitted
Filling
- 2 cups cashews (soaked for at least 4 hours and drained)
- ½ cup lemon juice
- ½ cup maple syrup
- 1 teaspoon vanilla extract
- Pinch of sea salt
- ½ cup melted coconut oil
- 1 mango, chopped (approx. 1 cup)
- 1 pinch turmeric
- 1 cup strawberries
Directions
- Prepare the Crust: In a food processor, pulse the coconut flakes, macadamia nuts, and sea salt until finely ground. Add the dates and process until a sticky dough forms.
- Form the Base: Line a 9” springform pan with parchment paper. Press the crust mixture evenly into the bottom, using the back of a spoon to compact it well.
- Make the Filling: In a high-speed blender, combine the soaked cashews, lemon juice, maple syrup, vanilla extract, sea salt, and melted coconut oil. Blend until smooth and creamy.
- Layer the Flavors: Remove ⅓ of the mixture (about 1 cup) and set aside. To the remaining ⅔ in the blender, add the mango and turmeric. Blend until fully incorporated, then pour over the crust. Let this layer set in the freezer for about 30 minutes, or until firm to the touch, before adding the next layer to ensure clean, defined layers.
- Final Layer: Blend the reserved cashew mixture with the strawberries until smooth. Gently spread over the mango layer.
- Set & Serve: Chill in the fridge overnight or for at least 4 hours. For a quicker set, place in the freezer for a few hours. Slice and enjoy!
