Halibut with Sweet Garlic Tomato Sauce
This dish pairs tender, flaky halibut with a rich, garlicky tomato sauce. A hint of maple syrup enhances the natural sweetness of the tomatoes, while fresh basil brings a bright, aromatic finish. A simple yet elegant meal that comes together quickly and is packed with flavor.

Tomato Sauce
- 1 red onion, diced
- 2 tomatoes, diced
- 2 tablespoons olive oil, divided
- 4 cloves garlic, pressed
- 1 tablespoon maple syrup
Halibut
- 350 grams halibut (skin off)
- 2 teaspoons olive oil
- 1 teaspoon maple syrup
- ½ cup chopped basil
- Sea salt and pepper
- 4 full basil leaves for garnish
Directions
Tomato Sauce
- Heat 1 tablespoon olive oil in a small sauté pan over medium heat.
- Add the diced red onion and sauté until softened.
- Stir in the pressed garlic and cook for 1–2 minutes.
- Add the remaining tablespoon of olive oil and the diced tomatoes.
- Cook for 7–8 minutes until the tomatoes break down.
- Stir in the maple syrup and mix well.
Halibut
- Cut the halibut into 2×1-inch pieces.
- In a new pan over low heat, add olive oil, a pinch of salt and pepper, and the maple syrup. Heat for about 1 minute.
- Add the chopped basil and sauté for 2 minutes.
- Place the halibut in the pan and turn with tongs to coat all sides with the basil mixture.
- Increase heat to medium, sprinkle with additional salt and pepper, and cook for about 6 minutes, or until the fish is opaque and flakes easily.
- Spoon half of the tomato sauce onto a plate and place the halibut on top. Garnish with fresh basil leaves before serving.
Chef’s Tip
For an extra layer of flavor, add a splash of balsamic vinegar to the tomato sauce as it cooks. If you prefer a bit of heat, sprinkle in a pinch of red pepper flakes for a gentle kick.
