This vibrant, nutrient-dense dish combines protein-rich quinoa, antioxidant-packed goji berries, and hearty greens for a flavorful and nourishing meal. The natural sweetness of goji berries pairs beautifully with the savory tamari and the warmth of ginger, garlic, and black pepper. Finished with toasted pine nuts for a crunchy contrast, this dish makes for an energizing side or a satisfying main course.

Ingredients

  • 1 cup uncooked sprouted quinoa (yields approx. 3 cups cooked)
  • 2 heaping tablespoons coconut oil
  • ยฝ teaspoon ground black pepper
  • 3 cups finely chopped sweet onion
  • 3 heaping tablespoons pressed garlic
  • 3 heaping tablespoons grated, peeled ginger
  • 1 ยฝ tablespoons lemon juice (approx. 1 large lemon)
  • ยผ cup wheat-free tamari
  • ยผ cup maple syrup
  • ยฝ cup goji berries
  • 1 large bunch green kale
  • โ…” cup raw pine nuts

Directions

  1. Cook the Quinoa: Rinse quinoa under cold water. Add to a pot with 2 cups of water and bring to a boil. Reduce heat and simmer with a lid until water is absorbed and quinoa is fluffy, about 15 minutes.
  2. Soak the Goji Berries: Place goji berries in water and let them soak until ready to use.
  3. Prepare the Kale: Wash the kale, remove the tough stems, and chop into small pieces.
  4. Sautรฉ the Aromatics: Heat coconut oil in a pan over medium heat. Add onion and cook until translucent, about 4-5 minutes. Stir in black pepper, garlic, and ginger, and sautรฉ for another 2 minutes.
  5. Build the Flavor: Add tamari, lemon juice, and maple syrup, stirring well over medium heat.
  6. Incorporate the Goji Berries: Squeeze excess water from the soaked goji berries, mince into small pieces, and add them to the pan. Let the mixture cook for about 5 minutes until the flavors meld together.
  7. Add the Kale & Quinoa: Stir in the chopped kale, allowing it to wilt slightly. Then, fold in the cooked quinoa and mix thoroughly. Taste and adjust seasoning as needed.
  8. Toast the Pine Nuts: In a separate dry pan, toast the pine nuts over low heat until slightly golden. Stir them into the quinoa mixture before serving.
Chef’s Tip

For extra crunch, reserve some toasted pine nuts to sprinkle on top just before serving. Want even more depth? Try adding a squeeze of orange juice to enhance the natural sweetness of the goji berries!
