Ingredients

Sauce:
  • 1 tablespoon lime juice + wedges to serve
  • 2 tablespoons chia seeds
  • 1 tablespoon garlic, minced
  • 1 tablespoon tahini
  • 2 tablespoon toasted sesame oil
  • 1 tablespoon honey
  • 2 ½ tablespoons gluten-free tamari + more to taste
  • 3 tablespoons brown or white rice vinegar
  • 1 tablespoon olive oil
Veggies:
  • 2 teaspoons olive oil
  • 3/4 cup carrot, peeled and sliced into thin rounds (approx. 1 carrot)
  • 2 cups purple cabbage, coarsely shredded (approx. 1/2 small cabbage)
  • 2 loose cups spinach
  • 1 cup red pepper, sliced into thin strips (approx. 1 pepper)
  • 1 cup zucchini, cut into half-moons (approx. 1 small zucchini)
  • 1 cup red onion, finely chopped (approx. 1/2 red onion)
  • 2 cups broccoli florets (approx. 1 head of broccoli)
Garnish:
  • Chopped cilantro
  • Black sesame seeds
  • Lime wedges

Directions

  1. In a small bowl, soak the chia in the rice vinegar for 10 minutes then whisk together remaining sauce ingredients until smooth and well combined. Set aside.
  2. Heat a large frying pan or wok over high heat and add 2 teaspoons of olive oil.
  3. Add the carrot, broccoli, and red onion first, cooking for about 3 minutes while stirring frequently until slightly softened.
  4. Add the zucchini, red pepper, and cabbage, tossing well with the other vegetables. Sauté for another 2-3 minutes until tender but still vibrant.
  5. Once the veggies are cooked, turn off the heat and add the spinach, tossing well to allow it to wilt.
  6. Remove the pan from heat and pour the sauce over the vegetables, mixing thoroughly to ensure everything is evenly coated. Adjust taste with tamari as needed.
  7. Serve warm, garnished with fresh cilantro, black sesame seeds, and lime wedges.
Chef’s Tip

For even more flavor, add ginger juice to the sauce.
