Chia Tahini Sauce with Sautéed Veggies

Ingredients
Sauce:
- 1 tablespoon lime juice + wedges to serve
- 2 tablespoons chia seeds
- 1 tablespoon garlic, minced
- 1 tablespoon tahini
- 2 tablespoon toasted sesame oil
- 1 tablespoon honey
- 2 ½ tablespoons gluten-free tamari + more to taste
- 3 tablespoons brown or white rice vinegar
- 1 tablespoon olive oil
Veggies:
- 2 teaspoons olive oil
- 3/4 cup carrot, peeled and sliced into thin rounds (approx. 1 carrot)
- 2 cups purple cabbage, coarsely shredded (approx. 1/2 small cabbage)
- 2 loose cups spinach
- 1 cup red pepper, sliced into thin strips (approx. 1 pepper)
- 1 cup zucchini, cut into half-moons (approx. 1 small zucchini)
- 1 cup red onion, finely chopped (approx. 1/2 red onion)
- 2 cups broccoli florets (approx. 1 head of broccoli)
Garnish:
- Chopped cilantro
- Black sesame seeds
- Lime wedges
Directions
- In a small bowl, soak the chia in the rice vinegar for 10 minutes then whisk together remaining sauce ingredients until smooth and well combined. Set aside.
- Heat a large frying pan or wok over high heat and add 2 teaspoons of olive oil.
- Add the carrot, broccoli, and red onion first, cooking for about 3 minutes while stirring frequently until slightly softened.
- Add the zucchini, red pepper, and cabbage, tossing well with the other vegetables. Sauté for another 2-3 minutes until tender but still vibrant.
- Once the veggies are cooked, turn off the heat and add the spinach, tossing well to allow it to wilt.
- Remove the pan from heat and pour the sauce over the vegetables, mixing thoroughly to ensure everything is evenly coated. Adjust taste with tamari as needed.
- Serve warm, garnished with fresh cilantro, black sesame seeds, and lime wedges.
Chef’s Tip
For even more flavor, add ginger juice to the sauce.
