White Bean Power Dip
1/8 cup lemon juice
1 tsp pressed garlic
1 cup organic cooked cannellini beans
½ tsp ground cumin
1 tsp sea salt
2 cups chopped zucchini – 1 medium zucchini
¼ cup hemp hearts
1/8 cup nutritional yeast
1/8 tsp ground cayenne – I add ¼ but I like the kick! – Omit completely if you do not like spice
1. Add ingredients in the order listed and blend well in a cuisinart.
2. Serve with fresh vegetables, use as a spread for sandwiches or in wraps, or use as a base to thicken salad dressings.
3. If you would like the dip to be a thicker consistency blend with 1-2 tablespoons of olive oil and adjust for taste.
