Raspberry Chia Parfait

Ingredients

1 ripe banana
1 large handful of spinach (approximately 1 heaping cup chopped spinach) 1 packed cup of raspberries
1 medium orange – I used a navel. Use a knife to cut the peel off.
1/4 cup + 1/8 cup chia seeds – used black
1/8 cup of water

Toppings
Berries
Crushed walnuts and/or almonds
Hemp hearts – optional

Directions

1. Blend banana, spinach, raspberries, orange, and water until totally liquefied. There should be no green pieces left at this stage.
2. Pour into a mason jar/bowl/tupperware container and add the chia seeds. Stir well so seeds are evenly distributed.
3. Leave overnight or for approximately four hours.
4. In the morning before work, or in the evening for a quick snack, take a scoop of chia mixture, top with berries, crushed walnuts or almonds, and hemp hearts.
